Remodeling Amyloid Fibers: Baker's Yeast Shows Us the Way.

Proteopathies are a large and diverse group of human diseases that are caused by protein misfolding. Well-known examples of proteopathies are Alzheimer's and Parkinson's disease, which are both linked to amyloid fibril formation. In this issue of Chemistry & Biology, Castellano et al. (2015) describe the way to harness the power of a protein from baker's yeast, Hsp104, to disaggregate the fibrils.

Baker’s yeast catalyzed Henry reaction: Biocatalytic C-C bond formation

The C-C bond formation is an important reaction in organic synthesis to obtain value-added intermediates. Therefore, in this paper an attempt has been made to accelerate the Henry reaction (C-C bond formation) between aryl aldehydes and nitromethane using less expensive whole cell biocatalyst, baker’s yeast (BY). The scope of the methodology was also tested for the heteryl aldehyde i.e. 2-chlor...

Enhancement of the proline and nitric oxide synthetic pathway improves fermentation ability under multiple baking-associated stress conditions in industrial baker's yeast

BACKGROUND During the bread-making process, industrial baker's yeast, mostly Saccharomyces cerevisiae, is exposed to baking-associated stresses, such as air-drying and freeze-thaw stress. These baking-associated stresses exert severe injury to yeast cells, mainly due to the generation of reactive oxygen species (ROS), leading to cell death and reduced fermentation ability. Thus, there is a grea...

Septin Organization and Functions in Budding Yeast

The septins are a conserved family of GTP-binding proteins present in all eukaryotic cells except plants. They were originally discovered in the baker's yeast Saccharomyces cerevisiae that serves until today as an important model organism for septin research. In yeast, the septins assemble into a highly ordered array of filaments at the mother bud neck. The septins are regulators of spatial com...
